Kay Baxter, founder of the Kōanga Institute, has spent over fifty years collecting & preserving New Zealand’s largest and globally-significant heritage seed collection. With profound expertise in home gardening, nutrient-dense food production, and the vital connections between soil, seeds, and human health, Kay is a leading figure in regenerative agriculture.

An accomplished author, Kay has written extensively on regenerative gardening, homesteading, and seed saving. As a seasoned permaculture educator, she specializes in designing systems that nurture soil, plant, animal, human, and ecological health.

In 2017, she was awarded a New Year’s Honor for her work in preserving New Zealand’s heritage food plants and pioneering sustainable growing practices.

Currently, Kay is transitioning Kōanga Institute’s gardens to rely solely on local inputs, setting a powerful example of regenerative food production, self-reliance, and local food sovereignty.
